One of my Master's has a tau character in it. It shows up as a tau symbol in
the stencil, however when I drag it onto my drawing page it shows up as a
't'. I had a coworker open the same visio file, and when he drags it onto
the page it appears as a tau. Is there a specific setting or add in that I
am missing that allows me to see the symbol as a tau and not a t?

What is the font setting for that character in the master? What font
is used when the master is dropped?
You may find that the font after the master has been dropped is not a
unicode compatible font and doesn't contain the tau character.

The font of the tau symbol is GREEKC. When I drop it to the page the font
is still GreekC, but it shows up as a t. The weird part is my coworker can
see the tau as a tau and not a t where on my computer I see a t and not a tau.

the next step might be to check which printers are being default selected
(print fonts).

GreekC isn't a Unicode font, it just displays the Greek tau character
in place of a t. Why not use a proper tau character instead?
When in text edit mode:
menu Insert -> Symbol
