Virus Scanning feature

It is my understanding that the newer versions of Office software has a
built-in virus scanning feature. When I start Word or Excel, I have to wait
while the "virus scanning" feature does it's thing. Is there a way to
disable or deactive this feature?

That's not an Office feature, it's something your anti-virus software has
installed.
