If I were to have your problem, I would go for the following solution:
By default, you have one text field on every connector, like you said.
So, I would make a new shape, containing a line that has two connection
points (to have back the'connector' you're talking about).
After that, I would create three control points, one in the middle, one at
the left and one at the right of the connector. You will then have three
yellow 'indicators' appearing on the connector. Those yellow indicators
will be the 'placeholders' for the three text boxes that you have to create
(see further). Those yellow indicators are also the references that you can
use to position the location of the three text boxes.
Then I would create 3 text boxes, define their size and font to be used and
then connect them to the three control points just made. You can then
justify the location (left aligned, right aligned, middle aligned, you name
it...).
All this can be done by the help of modifying the shapesheets of the
connector and the 3 text boxes.
Don't know what your experience level is using shapesheets, but to me that
shouldn't be so difficult. There's in fact no programming needed to achieve
this, just some logical thinking while creating the shapes and making the
necessary connections between the different shape sheets of the different
items (connector and text boxes).
I'm also assuming you want a straight connector (you didn't specify this).
Of course, if you want a connector which isn't straight, this will make
things (much?) more complicated.
