Want to keep all mail as new until opened.

When I view a message in the preview pane and click on the next message, it
assumes that I have read that message. Is there a way to keep all mail as
new or unread until it is opened up instead of just viewing it in the preview
pane?

You should be able to change that in OL2003 by altering the settings here:
Tools menu > Options > Other tab > Click Reading Pane
