For your first question about the <w:defaultFonts:
<w:defaultFonts sets the default font in the document. In Word 2007, the
default values will be defined in the word/styles.xml file:

For the second question about the equivalent of <w:view, <w:mirrorMargins,
<w:defaultTabStop, and etc, they reside in the word/settings.xml, under the
<w:settings node. Here is a blog listing all the equivalent settings and
the corresponding sections in the spec.

For the third question, do you mean to set the language code for the
document? If that, the language code can be set in word/styles.xml, <w:lang
w:val="en-US" w:eastAsia="zh-CN" w:bidi="ar-SA" /> (see the example for
the first question.). Language Code Table could be found in Section 2.15.52
of the spec: office Open Xml Part4. If I am off base, please feel free to
