What is a list sheet

I have never used list sheet (template) before, what is the use of list sheet?

I would also like to create a template which looks like the legal ledger
templates but with my own customizations like column drop down categories and
date/number format.

It looks like a database table.

The use? It's a sheet that contains a list. Since it doesn't display
cells outside the list, it's less visually confusing, perhaps.
