What is MIME and how do I read it in Outlook?

I am receiving emails from job applicants via a reputable newspaper's c.v.
matching service. Every applicaiton that I receive states " This message is
in MIME format. Since your mail reader does not understand this format, some
or all of the message may not be legible".
How do I enable MS Outlook to receive and read MIME correctly? Any help
appreciated.
