What is require to have access to work with Touch screen functionality

you would need a touch screen monitor (cannot make any recommendations).

if you do not want to use a keyboard at all, then your application would
need to be designed to take advantage of the touch screen (with the
ability to enter text and numbers) ... so "very simple" it is not...

While that is true, generally applications with a touch screen do NOT
use mouse or keyboard ... and, in that case, the application needs to
have a way to enter data using the screen ... unless ALL the user would
be doing is simulating mouse-clicks
