The document start to scroll and won't stop until it gets to the end.
How can I get it to select without it taking on a mind of it's own and
selecting everything.

Use Extend Selection Mode. You will see it in your status bar at the
bottom of the screen. Click anywhere you want to start highlighting
and then double-click the EXT in the status bar or you can press F8.

Once you have invoked Extend Selectio Mode, you can use the arrow keys
and other navigation keys to extend the selection:

Press F8 repeatedly to enlarge the selection to the current word,
sentence, paragraph, section, or document.

Shift + F8 reverses the progression.

If you type a character, the selection extends to the next instance of
that character whichime comes in handy for jumping to the end of a
parenthetical phrase. If you perform a search, the selectin will extend
to include the found text.

You can also press Ctrl + Shift + F8 and hten use the arrow keys or
mouse to elect a rectangular block of text.

Extend Selection Mode ends when you cut, copy or format the selection
or press Esc.
