Where can I get definitions of shapes in Visio

For basic flow chart shapes, where can I get a difinition of that the
difference between a process shape and a definded proces shape etc.

flowcharting isn't 'owned' by microsoft but is a base skill for many
different professions so the first point might be to find a book on
amazon.com. an alternative to begin with is over here

Try Window > Show ShapeSheet. That is how their behaviors and vectors are
defined.
