where is Auto Format?

Auto Format in Word 2003. You would type common words in auto format so that
when you typed the first 2 or 3 letters you would press enter for that word
to be automatically inserted.. IE Gerald, Ger (Gerald would appear & Enter
would make Gerald). I have searched Word & Outlook & no Auto format. As I
type my E-Mail
(e-mail address removed), all I would type is joh & I have the option of hitting
enter for my E-Mail address to fill in.

What you've described is _not_ AutoFormat, but either AutoCorrect or
AutoText.

In Word 2003 the dialog to control AutoCorrect is at Tools >
AutoCorrect Options. In Word 2007, click the round Office Button,
click Word Options in the bottom edge of the menu, go to the Proofing
tab, and click the AutoCorrect Options button.

In Word 2003 the dialog to control AutoText is at Insert > AutoText >
AutoText. In Word 2007, click Insert > Quick Parts > Building Block
Organizer. (AutoText is now part of a much larger feature called
Building Blocks.) To create a new entry, type the text into a
document, select it, and click Insert > Quick Parts > Save selection
to Quick Parts Gallery, then set the Gallery dropdown in the dialog to
"AutoText".
