Where is label control?

I'm drafting a software user interface. I can't find a label in the
common controls Shape section. I tried to substitute a text box but
the background inside the box remains white and it also has borders. I
can change the background behind any typed in text but the rest remains
white.

Is there something similar to a label in Visio 2007?

Also, Visio lets me publish as a PDF but arethere any other non Visio
formats I can publish as?

I believe the text box tool is what I want. One problem is that my
layout is covered with two panels. When I click the text box tool and
then click a panel where I want the text to appear, the panel
highlights and any text I type becomes part of the panel. I have to
move the panel over, click into the layout's white area, type my text
into the text box tool, move the panel back to it's original position,
then position the text box. Is there an easier way?
