There are a variety of templates, so you should check them out to see which
work best for you. If you have Visio Pro, start with the Software
category, as there are several types around the program structure/data
flow/application design area. Also, in both Visio Standard and Pro, the
Flowchart category has the Basic Flowchart type, as well as some others
with unique shapes.
Also, you may already know this, but you can use many of the shapes in
other templates. For instance, you could start with the Basic Flowchart
template, and open one of the other stencils for specific shapes.
Finally - if you have a certain shape in mind, you can try searching by
name under Search For Shapes. This can sometimes overwhelm you with
shapes, but can help in finding out whether a specific shape exists.

I need to document features for a new application within a website. Data
flows to and from 2 outside sites and 1 internal site. I'm focusing on
"when
this is clicked, this happens and data flows from here to here" What
template would work best?
