Why can't I insert a sentance? It types over the existing text.

While trying to edit a letter, I wanted to insert a missing word. Instead of
inserting the word, it wrote over text I did not want to lose. I had to type
the letter over again from that point on.

Perhaps you have inadvertently invoked "Overtype" mode - possibly by pressing
the "Insert" key on the keyboard by mistake or (depending on the version of
Word you are using) double-clicking the letters "OVR" in the status bar at
the bottom of the document window?

I believe Gordon has accurately assessed the reason for the occurrence, but
as for having to "type the letter over..." - are you not familiar with Undo?
