Why do my Excel charts keep resetting to the 0/1/00 date?

I am trying to do the dd/mm/yy hh:mm format for a scatter plot, and my x-axis
is still linked to the source but it makes all the data appear on that date,
no matter how I format the columns. If I make a new graph, it works until I
save the file and delete the data for a new chart.
