Why does current user come up as Admin?

I am trying to setup a combo box which shows the Name of the person who is
looking at the form. I assumed using the login name was a good start, but
it is showing up as Admin. I am not currently logged in as Admin.

Also, once I do get the correct login name how can I tell the text box to
use a substitute for that login. (i.e. jries should appear as Jeffrey K.
Ries)

It sounds like you want your Network long in name. If that is the case, use
