Everytime I restart my computer I have to change my incoming server from
local host to pop3.orcon.net.nz - why will it not retain this?

Wellcome to the world of email scanning in antivirus
your antivirus creates a proxy server in order to scan the incoming mail

You might want to check with your antivirus software manufacturer to see if
they have a newer version that will not change the server names, or if they
have a fix for the problem.
