Why is Word saving embedded spreadsheets as graphics?

I'm using Office 2003 with multiple spreadsheets embedded in Word documents.
If I go back and forth editing and/or coping and pasting cells, periodically
Word saves the spreadsheet as a graphic (picture) and I can no longer edit
the spreadsheet, nor can I reverse the conversion.

I've refered this to MS Customer Support and they recommended repair using
Open Office (it didn't work). Any thoughts?
