User error.
I can't think of any other reasons why outlook would think the default
calendar was the deleted folder. It can't be rules for new appointments
(only incoming meeting requests would be affected by rules). It could
possibly be an add-in doing it - but I have no idea which addin would do
it.
Unless it’s a new Dell laptop... the outlooksetupaddin screws a lot of
stuff
up.

This is a new appointment form and it goes there when you save ans
close
the
form? If so, try restarting outlook with the reset folders switch. At
start
menu, run, type
outlook.exe /resetfolders
