Messages always print with their Subject, Conversation, Date, From, and To
fields.

Open Entourage Help: search for "Print a message"

If this is not working for you, can you post a screenshot showing the
preview when you select print.

You can post a screenshot link using a service like ImageShack. ImageShack
is an easy-to-use free media hosting service. It can be used to upload
images. Registration is not required in order to upload files.

How To Post Screen Shots To Newsgroups

1. On your keyboard, press Command-Shift-4.
2. On your keyboard, press the space bar.
3. Click the window you want. A picture file will appear on the desktop.
4. Go to http://imageshack.us/.
5. Click Browse, then navigate to and select the picture file.
6. Click "host it!".
7. Paste the "Show image to friends" URL in a newsgroup message.

Actually that's not entirely true. Messages with complex HTML will print
only with the message body. It is a known issue (ref 'mhtmlmain'), and one
of the incomprehensible limitations of Entourage's HTML rendering.

Interestingly you also get an entirely different Print Dialog since
Entourage has to hand the message off to the Mac OS. As I understand the
problem: since Entourage is unable to interact with the complex HTML, it
hands the entire thing off to the Mac OS to print - but only the message
body and not the headers (since it sees them as separate elements).

I took this from Entourage Help. I'll make sure this gets updated.
