Will Office 2007 Home and Student edition delete Outlook 2003?

My concern, if I load Office Home and Student 2007, which DOESN'T have
Outlook, overwrite my 2003 Office edition which DOES have Outlook, leaving me
with NO Outlook? Or will the 2007 version simply overwrite the programs that
do exist from 2003, only (Word, Excel and Powerpoint)?

NO. Outlook is not affected. You can have only 1 instance of Outlook installed on your computer. Even if you want to install Outlook 2007 you would need to remove Outlook 2003 from your computer.

So go ahead and Update your Office and Outlook 2003 will not be compromised.
