I read something about the windows logo key in combination with another key
doing some sort of a screen shot. Can anyone help out here.

Windows key + S or Windows key+s

Right click on the OneNote icon in your taskbar and see Create Screen
Clipping.

I accidently deleted the onenote icon in the tray and I believe in the
process I have disabled that feature. Any help would really be appreciated

In OneNote 2007, the check box for the OneNote icon in the Notification area
of the Taskbar is in Tools, Options, Other.
If the box is currently checked, you may need to clear the box, restart
OneNote and check the box.

For full keyboard shortcuts OneNote 2007 ,in the Menu bar go to help >
keybiard shortcuts.

For those which include the WinLogo key, The OneNote icon must be active in
the notification area, at the far right of the Windows taskbar.

to make that icon appear, in the menu bar go to
Tools > Options > Category : Others >
then Tick the first box that says
"Place OneNote icon in the notification area of the taskbar" now u have the
icon.

the ShortCuts are .
Inserting a Screan clip: WinLogo key + S
Open a new side note : WinLogo key + N
Open OneNote as a program : WinLogo key + Shift + N
