Actually if you open up a new drawing it should have a series of numbers
like drawing 1, 2, 3, etc. If a new drawing is being opened from File >
New > New drawing there should be no stencils or solutions opening under
this method unless that menu item has been modified. Do you have any
add-ons for Visio installed?

Then it would appear that Visio is remembering the last thing you did. You
might consider opening the starting page to create a blank drawing and see
what happens.
