I have to say I do not get this here(Word 2007 SP1 on Vista). But when you
edit,
a. is your recipients list in a ".mdb" type file?
b. when you click edit, does a second dialog box pop up that lets you edit
the fields "in situ"
c. do you get immediate confirmation messages each time you delete a
message?
d. do you get a "do you want to save the changes" type message when you exit
that dialog box (ie. before you quit out of the Edit Recipients dialog box)?

OK, I wondered if Word might be opening your data source using a different
method, but it's exactly the same as here.

Not sure I can help, but I may as well ask...
a. Roughly how many records and fields do you have?
b. is your .mdb file on a local disk or a network drive? (actually that
makes no difference here either so far)
c. is your Word document on a local disk or a network drive?

Both the data base and document are on the network. Approximately 19 fields
and 1,400 records.

I tried this scenario to be sure and did not encounter the problems you are
seeing. FWIW I am using Vista 64 SP1 and Word 2007 SP1 on a Windows 2003 SBS
network. If you have multiple Word 2007 users accessing this data
simultaneously, that might cause problems and it's not a scenario I can test
here.

If you have not installed Word 2007 SP1 then I suppose it is just possible
that that will make a difference, but I am not aware of any problems/fixes
that would affect this.

So it's difficult to know what you could try, but
a. it might be worth running Word->office Button->Word
Options->Resources->Diagnose
b. if there are multiple users, see if it makes a difference if there is
only a single user
c. if possible, make a copy of the database .mdb on a local drive and see
if that makes a difference.

As far as editing the records is concerned, if you have Access, you can use
that to edit your .mdb file. However, the "Office Address Lists" (OALs)
created by Word have a particular format that can be damaged if you edit the
..mdb directly in Access. The data should still be usable by Word in that
situation, but would not be treated by Word as an OAL and I do not know of a
reliable way to turn the .mdb back into a proper OAL. So again, if you try
that approach, you should make a backup copy of your .mdb
