Word 2007 - Insert date on new document?

Hi all and thanks in advance for even reading this.

I want to make a template for a letter. Whenever I create a new
letter from the template I would like the date filled in automaticly.
However, I DO NOT want the date to change in the future if I open the
document again. This is a problem I've had with the auto update date
thingy. (Yep, I'm an amateur!).

Probably easy when you know how. So, how, please?
