Word 2007 Template

I am setting up a word template for a letter. I want to be able to have the
Letter Reference automatically added to the Page header of Page 2 and onwards
once the ref is typed in. I'm sure you used to be able to do this on older
versions with Auto text or something similar, can anyone point me in teh
right direction ?
