I'm hoping someone might be able to tell me how to customize the quick lauch
buttons in word (i.e. so when you select insert table it creates the table in
the custom style I've already created)?

For what you want you don't need to customize the QAT. Instead, right-click
your custom table style in the gallery and then click "Set as Default".
