Please can any one tell me how to change and keep the font size at 12/14 when
writing letters as word always opens by default in 11.

Press Alt+Shift+Ctrl+S. Click the Manage Styles button. Click the Set
Defaults tab. Choose the desired options. Click "New documents based on this
template," and then click OK.

There should be three buttons at the bottom of the dialog box - one of them
is "Manage Styles"

Are you sure that you are looking in the correct location? If the shortcut
isn't working for you, you should be able to display the Styles pane by
clicking the dialog launcher button in the Styles group (of the Home tab).

If you are just changing the font, you can press the Default button in the
Font dialog box, as suggested by Venture. Similarly, the Default button in
the Paragraph dialog box allows you to set the default line spacing,
indents, etc.
