Word and inserting files

I often make up a combined file from smaller files (or chapters) when completing uni assignments. I have noticed when using Office for Mac that when I change font sizes or font displays for some highlighted text, the whole document changes. This slows up the whole process as I have to continually check the whole document. Any clues?
