Is it possible to turn off all or some of the Word
automated functions
They are all hiding under Tools | AutoCorrect, in the 4 tabs, explore there.
The checkboxes in AutoFormat As you Type are the biggest culprit.
AutoCorrect (replace text as you type) should not be rejected until you see
if you can tweak it to work for you instead of against you, for info on that

(hit refresh a few times in Safari, or use a different browser)
If you want, Send Feedback from the Help menu that these settings really
need to be accessible from the Preferences dialog, because they are
preferences.
