Word frequently hesitates while I am typing

While typing word will pause. If I type fast characters
are missing while it is hesitating and doing something.
The bottom bar shows a book w/pen making like it is
writing. Is that paginating? If so how do I turn it
off. Or what else could be causing the hesitations?

No, that's "Check spelling as you type" and/or "Check grammar as you type."
If this is seriously affecting performance, you can disable it (Spelling &
Grammar tab of Tools | Options).

Turning off spell/grammar check did not work. It seems
like I need to turn off "background pagination" however
on options, "background pagination" is checked but grey
so I cannot uncheck it. Do you know how to do that?

You can disable background repagination only in Normal view (and it will be
reenabled if you switch to Print Layout view).
