I have a very long doc I've been working many hours on. I
made some minor changes and saved the doc again. When I
opened up the doc, all the changes / additions /
deletions had been highlighted in blue with side notes in
blue boxes. The document prints in small fonts with all
of the changes highlighted and underlined in blue. I
cannot find a place to change this.

It sounds as though you have your "Track Changes" feature
turned on. This is an option under your Tools menu
(Highlight Change submenu), which you can turn off by
going into the feature and unchecking all of the
checkboxes (there are 3). If you like being able to see
your edits (or those of others), you can keep the feature
turned on and use the "Accept or Reject Changes" option
under the "Track Changes" submenu under the "Tools" main
menu.
