Word reverting to primitive non-standard sizes - how do I force A4?

Word for Mac 2011 has the same annoying behaviour as previous
versions. It seems that, whatever I set the default language to and
default paper size, it insists on reverting to 'US Letter' and 'US
English'. I've deleted the US English dictionary from my mac, but it
seems word has it own version.

How can I delete the paper size 'US Letter' - I will never, ever want
to print anything using it?

How can I delete 'US English' as a dictionary - I will never, ever
want to have things mis-spelt by it?
