Word should do only what I ask, nothing more.

I spend a lot of time undoing the changes Word makes that I haven't asked
for: making unwanted capitalization changes, reformatting bulleted/numbered
lists wrongly, applying a font change outside of the selected text and on and
on.
I want a mode where Word does exactly what I command, and nothing more.
I'm using Office 2003 for Windows XP.
