Word Templates Using Form Controls

When I made up a template I used form controls like check boxes and text
fields. In order to use these templates, I had to protect the document. I
noticed that all the document templates in the Microsoft templates folders
were unprotected.

My question is that if I want to used controls like check boxes, dropdowns,
text fields, etc. do I have to protect the document? (it is the only way I
could may them work).
I found that text boxes in an unprotected document functioned better in the
Microsoft sample documents (was able to replace information easily) than in a
protected document.
Am I missing something?

Forms must be protected for filling in forms before they work properly. The
template from which the form documents are created is protected, and then
the documents will be as well.

Word 2007 templates probably use content controls rather than form fields.
Content controls, unlike controls from the legacy palette do not require the
form to be protected.. You cannot mix the two types. If you are creating a
form for others to fill in order to gather the data, use the legacy form
fields and protect the form.
