Here's what I did:
1. Open a new document.
2. Inserted a "Alphabet" header.
3. Changed the Text in the header to "Computer Notes".
4. Save the document as a Template (HeaderAndFooter.dotx) in the Templates
folder.
5. Closed and reopened Word2007.
6. Created a new document using the HeaderAndFooter template.
7. Doubled clicked on the header of the document.
8. Changed the text in the header to "Test Notes".
9. Clicked on the Close Header and Footer button to close the Header editing.
10. Saved the docunet as TestNotes.docx.
11. The text in the Header resets back to "Computer Notes".

The control you see is actually bound to the Title property for the
document. It's possible a privacy setting has been enabled which removes
personal data upon saving which removes information from the file
properties. I don't see how this could happen on a new document but it's
worth verifying. Click the Office Button, click Word Options, click Trust
Center, click the Trust Center Settings Button, and in the Privacy Options
make sure "Remove personal information from file properties on save" is not
selected. If this option is selected then how are you creating your new
document?

Beth,
The "Remove personal information from file properties on save" item is
grayed out. After I installed Office I moved my Documents folder from my C
drive to my D drive. Just to be sure I added the D:\Documents to the Trusted
Zone.

To create my document here is waht I did. By the way I've been using
Word/Office since version 1.
1. I clicked on the Office button.
2. Clicked on New.
3. I selected my Template.
4. Clicked on the Create button.
A new document is created based on my template.

Thanks for the sample file. :) I can reproduce this on my computer but,
since the control is bound to the document title my first suggestion is to
clear the Title property in the template. Click the Office Button, point at
Prepare, click Properties, and then delete the Title.

If that doesn't work then remove the text you typed in the control in the
header. What you are doing by "pre-filling" the Title control in the
template is adding a suggested name for the document when you save the file
for the first time. I suspect what you actually want to do is add different
instructional text. For this, on the Developer tab click Design Mode,
replace the default instructional text with your own, and then click Design
Mode again to toggle it off.
