What are the differences between the assignment work numbers and the task
work numbers?

If I export the Assignment work numbers for the previous six months I get
numbers for all months except the first month. However, when I export the
Task work numbers I get numbers for all six months.

Hard to tell you exactly why you are seeing what you are seeing but the task
work numbers include all work on a task. A task can have any number of
resources assigned to it. Each of those are assignments. Thus, assignment
work only equals task work when there is a single resource assigned and that
resource is doing all the work.

SO if a task finishes on time, without overtime or other extraneous factors,
Should the Total Task work = Total assignment work for the task?

Generally, yes. You need to be careful about Work, Actual Work and Remaining
Work though.
