work scheduling..

Hi, I'm building a work schedule to calculate needed employees versus
4 week history in sales. I have the spreadsheet laid out with th
employees listed in the first column and the time of day accross rows.
I have two seperate schedule sections, one for cooks, and one fo
delivery drivers(pizza delivery). I have the spreadsheet functional
it can calculate how many people I need at various times of the day, d
the math for projected sales and give me a total hours worked AND giv
me estimated labor percent for that week.

What I WANT to do is have all of the employees time calculated an
transfered to another worksheet for a combined printed schedule a
their is a single sheet for each day of the week. I don't put in cloc
in times and clock out times as I need to count every hours labo
versus every hours sales and typing 11-7 doesn't work for me(because
don't know how to make it work?). instead I place a 1 in eac
intersection between the employees name and the hour so that it i
calculated below and the spreadsheet can tell me I need 4 people o
whatever, and when I add one It counts the variance and says I nee
three more.

any ideas? Willing to send a copy of spreadsheet to anyone intereste
in helping me out.
