How do I stop Excel work sheets from opening up inside
the main window? In other words they open up with the
main screen and one work sheet opens inside it and I can
not find any other sheets.

I believe what you want is
Tools|Options|View tab, place checkmark next to Windows in Taskbar

Excel is what they call 'windowed' software. This means
that you can have multile things open in separate windows,
and sometimes the might cover each other. Click on
the 'Window' menu item. You will see there all the open
windows listed, and can click on them to switch to each.
