WSS Template - Way to have document templates be part of WSS Template

Is there a way(s) to have document templates such as word docs, excel docs,
etc be part of the WSS Template so that when a project site is created,
these 'empty' project docs are there to be filled out/completed/used?

if so, can you point me to how to accomplish this?

Yes you can, when you save a site as a template be sure to select
"Include Content"
