Does everyone experience this behavior when saving drafts in their IMAP
accounts in Entourage?

Yes. That's the nature of IMAP. You could start the message from a POP
account, then when you get ready to send change the From address to IMAP.

Otherwise, compose in a text editor then copy into your message window.
