BINGO! (You made my day.) Formatting Palette! Awesome tool. Now THAT makes Excel for MAC "intuitive". The chart now appears exactly as I need. Please indulge me as I have one last (repeat) Q.
There was a lot of conversation about populating those axis labels directly from spread sheet cells. I couldn't get any of them to work for me (and some were not clear to me). Is there really a way to mechanically initially populate those axis titles into the chart from cells? One of your notes said text referencing to cells was possible anywhere on a chart. (It sounded a bit like an after-the-fact editing opportunity.) Perhaps the sweet Formatting Palette would be used (?).

I'm taking it at face value that you do actually mean "axis labels", so:
Click the chart. [If the Toolbox> Formatting Palette isn't displayed go to
View> Formatting Palette].
In the Chart Options - Titles section of the Formatting Palette open the
list which reads "Chart Title" & Select "Horizontal (Category) Axis" then
type the title into the box directly below the list.
Repeat for "Vertical (Value) Axis.

Scatter chart? Yes! Thank you. Now, can you give me more step-by-step
instructions telling me exactly how to add axis labels? (At this point I don't
care if they come from referenced "header" cells or Crayola crayons.)
